At CERVO, the Alpine mountain landscape meets international flavours, regional produce and modern cuisine. Our three restaurants could hardly be more different – and yet they share one thing in common: a passion for good food, exceptional ingredients and moments of pure enjoyment.

Whether it’s Italian classics with a modern twist, Valais specialities or vegetarian dishes inspired by the Orient – there’s plenty to discover at the CERVO. We’ll take you on a culinary journey through our restaurants.

Madre Nostra – our Italian restaurant in Zermatt

At Madre Nostra, Italian cuisine is celebrated with great passion. Traditional recipes meet modern creations and refined classics – always with an eye on the wonderful treasures that Mother Earth has to offer. Wherever possible, the ingredients are sourced from the region and prepared fresh with great care.

From homemade pasta to exquisitely prepared meat and fish dishes and seasonal specialities: Madre Nostra brings a taste of Italy to Zermatt.

On the current menu, for example, you’ll find Vitello Tonnato with veal, tuna sauce, egg and capers, homemade pasta such as paccheri with pistachio and basil pesto, or exquisite dishes such as Tagliata di Manzo with risotto. The ingredients are selected with great care: meat and fish are organic, and the homemade pasta is made from 100% organic wheat.

Head chef Bogdan Bega and his team combine classic Italian cuisine with their very own distinctive touch. Look forward to dishes that feel familiar yet still surprise.

A visit to our sun terrace is a particularly delightful experience. With views of the Zermatt mountains, a lunch, an aperitif or a dinner quickly turns into a special mountain moment.

Après-Bike – almost like après-ski, only not quite as cold

After the bike ride is before the drink. If you’re out and about on your bike, you can pop into Madre Nostra between 12:00 and 18:00 with your helmet in your bag and enjoy a Huntsman beer for CHF 5.–.

So: bring your bike helmet, take a seat on the terrace and quench your thirst where the view is just as good as the beer.

Ferdinand – Valais cuisine with a fresh twist

At Ferdinand, it’s all about the region’s cuisine – given a modern twist and prepared with great attention to detail. Only Swiss produce is served, much of it sourced directly from Valais.

Cheese lovers are in for a particular treat: The menu features a variety of fondues, including the classic Moitié-Moitié, a 100% Valaisan fondue, and special variations such as the ‘Lumberjack’ with mushrooms, bacon and fried onions. The raclette selection also showcases the region’s diversity – with various Valaisan cheeses, served with jacket potatoes, cornichons, pearl onions and homemade accompaniments. Those who prefer something from the grill can put together their own Mixed BBQ platter featuring, amongst other things, Natura Beef, corn-fed chicken, Black Angus cervelat, bacon and grilled vegetables. At Ferdinand, the aim isn’t to reinvent the wheel, but to present regional cuisine in a contemporary way whilst respecting its roots.

The cosy chalet-style interior creates just the right atmosphere: warm, authentic and yet modern. After a day in the mountains, the Ferdinand is the perfect place to stop off, warm up and round off the day with a good meal.

Whether it’s a classic fondue, raclette or another Valais speciality – here, Zermatt tastes just like home.

Bazaar – a taste of the Orient

The Bazaar is the heart of CERVO. It’s where explorers, locals and modern nomads come together. The atmosphere is relaxed, open and lively – just like the cuisine.

The largely vegetarian dishes are inspired by the colourful and vibrant markets of the Orient. A variety of flavours, spices and textures come together, turning every visit into a little culinary journey.

The menu features dishes such as creamy hummus with mint, garlic and olive oil; smoky baba ganoush with coriander and yoghurt; and an aromatic dhal makhani with black lentils, sweet potatoes and chapati. For those who prefer something a little more substantial, there’s also a harissa-spiced steak made with Swiss skirt steak, served with pita, labneh and herbs.

At the Bazaar, it’s not just about the food, but also about spending time together. You share dishes, discover new flavours and are happy to linger a little longer.

Special coffee moments with Ibrahim

A visit to the Bazaar wouldn’t be complete without a coffee from our barista, Ibrahim. With great passion and creativity, he conjures up special coffee creations that have long since become an integral part of the Bazaar experience.

Whether as a way to start the day, a quick break in between, or the perfect way to round off a meal: for us, a coffee from Ibrahim is simply part and parcel of a visit to CERVO.

Opening hours: Daily 07:00 – 11:30 (breakfast), 10:30 – 14:00 (brunch) and 12:00 – 21:30 (dinner)
